  1. Nicknamed "mountain acacia,” rhododendron honey is a rare and prized honey due to its limited production. It is distinguished by its light color (golden yellow when liquid, white after slow crystallization due to its high fructose content) and its refined taste reminiscent of mountains and flower-filled meadows. It has a delicate, subtle aroma. Its sweet flavor is floral with a woody note on the finish. French rhododendron honey is harvested mainly in the summer.

    This honey contains many balanced trace elements. It is believed to have anti-rheumatic and skin-toning properties.


    ABOUT DE MALESCOT

    Formerly a grain farm located in France's Lot-et-Garonne department, the Malescot estate has been transformed into an organic beekeeping operation dedicated to creating an ideal environment for bees. This conversion, the result of a long transition, involves daily work selecting honey plants, maintaining plots, and planting hedges, with the aim of recreating a natural ecosystem requiring human intervention. The state has also integrated a honey production and processing unit to ensure optimal traceability and limit transportation.

  3. #HONEY CRYSTALLIZATION#All honey crystallizes! Contrary to popular belief, this does not mean that the honey is of poor quality or that sugar has been added. However, this natural phenomenon varies depending on the floral origin of the honey and its storage temperature. How can you liquefy honey that is too hard or too grainy? Simply place the jar of honey in a double boiler at a temperature not exceeding 45 °C, otherwise you risk losing its nutritional qualities. Please note: this will still alter its organoleptic qualities, particularly its taste and aroma. It is therefore best to leave it in its natural state!
